Mexican dishes


Chimichanga

Ingredients
1 Cup refried beans 
6 burrito
3 Tbl sp. Chilli sauce
1 capsicum green
1/2 cup cheese
1 sp maida
Sour cream
Salsa
Guacamole
Lettuce
Oil to fry

Microwave burrito for 10 sec. Add chili sauce to refried beans and capsicum. Take a burrito add 1 tbsp refried beans depending on size of burrito, put everything on one side to roll easy. 
Add little cheese now roll from middle first and then sides again middle. 
Add little water to maida and then use it to glue the very end of burrito. Make sure it's tightly rolled. 
Fry them in medium oil till crispy. 
Serve you can add all other ingredients on top, Lettuce, salsa, guacamole, jalapeño, sour cream.

Chili Potato Burritos

Ingredients
4 potatoes,
one cup shredded
cheese, 2 teaspoons chili powder, 1 tsp ground cumin
1 clove garlic, salt and pepper to taste, 8 tortillas1/2 cup red enchilada sauce


Method
Peel the potatoes and boil in salted water and mash it,Preheat oven to 350 degrees F (175 degrees C).
In a bowl, take mashed potatoes, cheese, chili powder, cumin, garlic, salt and pepper. Spoon evenly into tortillas, and roll up. Place rolled tortillas side by side in a baking pan. Spread enchilada sauce evenly over the top, and sprinkle with cheese Bake inthe preheated oven 15 minutes, or until cheese
Melt .you can mix jalapeño and all peppers bean etc in to the mixture.

Veggie tostadas 
Ingredients:
Corn tortillas
Black beans
Avocado
Tomatos
Cheese
Bell pepper
Sour cream
Salsa(finely chopped onions,  tomatoes, green chillies, lime juice, cilantro, salt)


To prepare:
Deep fry corn tortillas till they are golden brown. Take the fried tortillas and place cooked black beans on it. Also put diced avocado,  tomatoes,  bell pepper. Add salsa (spice level according to ur taste), sour cream and finally cheese on top. Ready to eat
Indead of frying corn tortillas we can bake the crispy corn tortillas in oven

7 layer bean dip

1can Refried beans
1 cup Salsa
1 cup Guacamole
Cheese
1 cup sour cream
Olives
Taco seasoning
Green onions

Method
Take refried bean in a pan and add whatever masala you prefer. I add little bit red chili flakes and chili sauce. 
In a glass bowl make layers
First add beans
Then add sour cream with taco seasoning
Guacamole
Salsa
Green onions
Cheese
Olives. 
Refrigerate about an hour. Serve with chips.

Home Made Tortilla wraps

Ingredients:

1 cup corn meal
1/4 cup all purpose flour 
salt as per taste
2 tablespoon oil

Mix all these above ingredients and make dough with warm water. Keep it for 30mins ane then make medium size tortillas.

Oil
1 cup boiled black eyed beans (Half crushed) 
1 small finely chopped onion
3-4 cloves finely chopped garlic
1-2 green chopped chili 
tomato sauce or catchup
Diced avocado, onion, tomato, coriender
Shredded Cheese(optional) 

Heat 2-3 tablespoon oil in pan. Add finely chopped garlic, chili, onion and stir it until golden brown, then add half crushed boiled black eyed beans. Add salt as per your taste. 

Now take one tortilla, spread tomato sauce/catchup, spicy black eyed beans, diced avocado, onion, tomato, coriender, cheese. Roll this tortilla and keep in oven for 5 mins just to melt the cheese.

Veg quesadilla -

 heat olive oil in pan add finely sliced onions, green peppers, olives, spinach n mushrooms n tomatoes add garlic salt. Take spinach tortillas toast it on 1side keep aside. Spread veg mixture on the toasted side add cheese cover it with one more tortillas toasted side inside . Toast the other side until cheese melts tortillas will stick and flip over carefully toast on other side. Serve w/ salsa, sour cream n gauc .

sending recipe of baked bean BARRITO . this is my all time favourite dish.
🌼BARRITO🌼

For d dough:- 2cups all purpose flour
3tbsp oil
salt. Bind dough adding  water. Roll make wraps and fry like frankie.

Stuffing :- 1can baked bean
4-5 spring onions
1 bell pepper
sauted onions and pepper then add baked beans. 

Hot sauce :-  pure of food1/2 kg tomatoes, 
10 dry red chilies soaked for 2 hrs and grind . 
Splutter ajwain in oil add the seived  puree and red chilie paste, 2 Spoon  sugar, salt little cornflour to thiken  this. Keep this aside.
Topping:- 1/2 cup fresh cream mixed with few drops of lemon juice.
1/2 cup grated cheese.

Now stuff each wrap with bean stuffing roll and arrange in the baking dish pour hot sauce over this garish with cheese and bake for 2-3 mins. 
Serve hot.

Nachos

For the corn chips 
1 cup maize flour
1/2 cup maida
1 tsp garlic crushed
1/2 tsp ajwain 
2 tbsp oil salt to taste, enough water. 
Mix all these and prepare d dough .knead well. Divide into balls. Roll each ball into round n cut it into 4 pueces.deep fry on slow flame.
For the cheese  sauce 
200gm cheese
50 gm butter 
1/2 cup milk
1/2 tsp red chilli powder a pinch of haldi powder
4 green chilli crushed
3 tbsp fresh cream
Melt the butter and cheese add milk red chilli powder n haldi powder. Boil for a minute.
Method spread the cheese sauce on corn chips. keep it in pre heated oven

Mocos recipe

(Taco filled with TVP, texured veg protien) instead of TVP you cud use mashed black or pinto beans or chickpeas. 
Veg oil
Capsicum diced
Onion diced
Garlic minced
Chilli powder
Cumin powder
Salt 
Black pepper powder
15 oz canned tomatoes chopped or pureed
Oregano
Cilantro
Boil TVP or mash up beans
Heat oil, saute onion, capsicum, garlic. Add all spices and tomatoes. Simmer for 15mins while adding beans/ tvp. Filling is ready!

Take taco shells
Arrange in layers:
TVP/mashed beans filling
Black olives,
Sour Cream
Taco sauce or salsa
Cheddar cheese

Serve with spanish rice
Also add shredded lettuce n diced avocado on the top of the taco shells
